  • 12 gms (2 tbsp) Instant Coffee Powder - Good quality coffee powder is a must. Or simply use the one you love drinking.
  • 162 gms (3/4 cup) Flavorless Oil - You can substitute it with, melted unsalted butter but do remember that the cake would harden up on refrigerating so remember to bring it to room temperature before serving.
  • 255 gms (1 cup + 2 tbsp) Caster Sugar - I prefer using Caster Sugar for baking in India. If you are living abroad then granulated sugar will also work.
  • 1 tsp Vanilla Extract or Essence

Dry Ingredients:

  • 240 gms (2 cups) All Purpose Flour / Maida
  • 3 tbsp Cornflour
  • 2 tsp Baking Powder
  • 3/4 tsp Baking Soda
  • 1/4 tsp Salt

For Streusel Ingredients:

  • 1 cup Walnuts, roughly chopped
  • 2 tsp Cinnamon Powder
  • 3 tbsp Brown Sugar

Step by Step Guide:

How to line the Bundt Pan:

  1. Use only oil to brush the sides of the pan well.
  2. Add about 1/4 cup of flour to it.
  3. Cover with aluminum foil.
  4. Shake the bundt pan well to coat the flour on all sides. Remove the foil and set aside until needed.

Prepare the Nutty Streusel Topping

In a medium bowl, take the roughly chopped walnuts along with the cinnamon powder and brown sugar. Using a rubber spatula or a spoon combine them well until the walnuts are completely coated. Set this aside.

Ingredients

For the Cake

For Walnut Crumble

  • 1 cup Walnuts roughly chopped
  • 2 tsp Cinnamon Powder
  • 3 tbsp Brown Sugar

Instructions

How to line a Bundt Pan

  • Brush the sides of the pan generously with oil. Add 1/4 cup flour to it. Cover with an aluminium foil and shake well to coat the sides of the pan. Set aside.

Make Walnut Struesel

  • Take chopped walnuts, cinnamon and brown sugar in a bowl. Mix with a rubber spatula to coat the walnuts well. Set aside.

Coffee Cake Batter

  • In a large bowl, whisk the yogurt and coffee powder until it is light, fluffly and smooth about 3 mins or so.

  • Add the rest of the wet ingredients - oil, sugar and vanilla. Whisk well.

  • Place a sieve on top and directly sieve the dry ingredients - flour, cornflour, baking powder, baking soda and salt into it.

  • Fold together using a spatula to make a cake batter like consistency.

  • Pour half of the batter on to the prepared cake pan. Layer it with walnut crumble and top it off with the remaining cake batter.

  • Bake this in a preheated oven of 180 degree celsius for 28 to 38 mins or until a skewer inserted in the centre comes out clean.

  • Let it sit in the pan itself for another 5 to 8 mins and then invert on a wire rack to cool completely.

  • Serve plain with a cup of coffee and add some lemon icing on top before serving.
